Cozy White Chicken Chili | Easy
This is my absolute favorite new weeknight dinner to make. It takes mere minutes to whip up, and when you serve it, its like a cozy meal that you slaved away making all day (our secret).
start by adding oil to the pan, about 2TBS. Add your chicken and cook until theres no more pink. chop up one bell pepper (I prefer red for this recipe but any color will work!) and mix it together with one can of drained black beans, one can of white beans, drained and one can of diced tomatoes, also drained. I happen to have trader joes southwestern diced tomatoes on hand and they gave it a little extra flavor and kick!
Add this to the pan with the cooked chicken. Now for the secret ingredient. This white chicken chili packet from McCormick is AMAZING! I find it at Target and stock up when I do! It gives the perfect amount of flavor and kick to the recipe. I did not this time, but Ill add lots of different veggies to this…corn, carrots, peas…you really can’t go wrong and your kids will LOVE this! So sneak all the veggies in you can!
after you add the seasoning, mix it all together and let it simmer for maybe 5/10 minutes until its nice and thick. I love to serve this with cornbread muffins as well as corn chips. This particular night Id accidentally bought corn chips with a Mexican seasoning on them from Trader Joes and it was the best accident ever. SO. GOOD.
I also recommend having fun with the toppings. Avocado, cheese, and sour cream are some of our faves to put on top.

Easy White Chicken Chili
1lb chicken breast
1TBS olive oil
I can black beans, drained
1 can white beans, drained
1 red bell pepper
1 can of diced tomatoes, drained
1 packet of McCormicks white chicken chili spices
Optional toppings: avocado, sprinkle cheddar cheese & sour cream
Start by adding oil to the pan, about 2TBS. Add your chicken and cook until theres no more pink. chop up one bell pepper (I prefer red for this recipe but any color will work!) and mix it together with one can of drained black beans, one can of white beans, and one can of diced tomatoes, all drained. Add the seasoning packet, along with one cup of water, and mix well. Let it simmer on the stove for 5-10 minutes until its nice and thick. Serve immediately with your favorite toppings and corn chips and/or corn bread. Enjoy!
